Ingredients:
Ham
Veggies(Carrots, onions, peas, etc.)
2-3 eggs
Rice
Cook rice as normal according to directions on package. For a more sticky consistency use an oriental rice like Rose or Kin Mai (a very high quality Japanese sticky rice), for a more loose consistency use a normal long grain or minute rice.
Blanch the hard vegetables (Peas, carrots, and any others) on the stove top or in the microwave so that they are slightly cooked before you pan fry them. Also, be sure the meat is pre-cooked (which is usually the case with ham).
Beat the eggs well in a separate bowl.
Add enough vegetable oil to a frying pan to lightly cover its surface. When the pan has heated up to about med-high heat, add the eggs and cook. Once eggs have mostly cooked stark breaking them up scrambled egg style and add the vegies and rice. Continue to stir fry all ingredients until the eggs are well cooked and a good mix is achieved. Flavor the rice by adding a few splashes of soy sauce to taste while stir frying. Or, for a more sophisticated bouquet (and to actually make it Japanese style instead of just normal fried rice), you might try adding a splash of rice vinegar and Aji Mirin (Sweet Japanese cooking wine).
For some variety it's always fun to try different kinds of soy sauce, like Amakuchi ('sweet') or Karakuchi ('spicy').
Enjoy!
