Nanna's Favorite Pizza Dough

1 1/2 cups warm water
1 1/8 tsp. yeast
2 T. brown sugar
1 1/8 tsp. salt
1 cup bread flour
3 cups regular flour

Conventional Method: In a large mixing bowl or bowl of a mixer, sprinkle yeast over warm water and stir to dissolve. Add the brown sugar and the salt and again stir to dissolve. Measure in both flours. Mix thoroughly. Knead dough for 10 minutes or until smooth and elastic. Cover and allow to rise to double its size. Punch down. Divide into 2 pieces. Flatten slightly and place on a well-oiled pizza pan, coating dough in oil. Let rest for 10 minutes. With the tips of your fingers and palm of your hand patiently spread dough until it fills the pan- you may neet to let it rest again if it is too springy. Finish out with the sauce, chesses, and pizza toppings of your choice. Bake at 450 degrees until crust is golden brown and cheese is bubbly and browned.

Bread Machine: Follow yoru manufacturers instructions for placing ingredients listed abvoce in the proper order into your machine. Set machine to run on the "dough" setting so you can remove dough and make pizza as described above. Nanna's note: This dough also makes excellent breadsticks and homemade soft pretzels. (Call Nanna on how to do the pretzels. ) YUM!
