4 cups old fashioned oats (I sometimes mix this with some portion of 5 grain cereal instea of straight oatmeal)
2 c. coconut
2 cups nuts (any kind will do-- almonds, cashews, macadamias, sunflower, pecans, walnuts- any or all of the above)
1/2 c. vegetable oil
1/2 c. honey
cinnamon sugar
Fruit Add-ins: raisins, dried cranberries, chopped dates, diced dried apricots
Chocolate chips
Preheat oven to 350 degrees. In large mixing bowl combine oates, coconut and nuts. In small mixing bowl combine oil and honey. Mix oil and honey thoroughly. Drizzle oil mixture over oats, etc. and stir until evenly coated. Dump out onto a large baking sheet. Spread mixture evenly and sprinkle with cinnamon sugar. Bake for 40 minutes, stirring several times to prevent hot spots. Remove when granola is golden brown. Allow to cool, again stirring several times (some sticking will occur). When cooled, toss in desired add-ins. Sotre in an air-tight container and enjoy.
